Cooking has always been more than just food for me—it’s a craft, a calling, and a gift. As a combat veteran, I’ve faced challenges that tested my resilience, but the kitchen has always been my sanctuary. My journey began at an early age, learning from the best—my Grandma Frances and Grandma Gia. These incredible women weren’t just passing down recipes; they were teaching me patience, tradition, and the kind of soul-driven cooking that turns meals into memories.
Later, I trained as a classically French chef, refining my techniques and learning the artistry behind flavors. But no matter where my culinary journey took me, I always carried the knowledge my grandmothers instilled in me—cooking with heart, honoring tradition, and feeding people with love. Their wisdom shaped the way I approach food; from the flavors I create to the care I put into every dish.
Now, alongside my wife Michelle, we bring you Tacos Mina, a celebration of bold flavors, handcrafted tortillas, and the passion that runs deep in everything we do. This isn’t just about tacos—it’s about legacy, love, and a commitment to sharing the best food possible, inspired by the ones who taught us and the journey that shaped us.
